The meat on Carson's Ribs is firm yet tender, holding tighter to the bone than most others. The 4 boneless, meaty, two-inch-high chops are slathered with barbecue sauce. The meat is so tender that the steak knife glides through it effortlessly. This moist and flavorful ``other white meat,'' abetted by fine barbecue sauce, makes for some awesome eating.The thick (almost the consistency of ketchup), tangy sauce has a subtle undertaste of sweetness, one that makes for some honest lip-smacking and down-to-the-bone chewing.
